With the last long
weekend of the summer here I have one more burger recipe for you, a green
goddess zucchini turkey burger that is just packed full of summer flavour!
Normally turkey burgers can be a little dry but the addition of zucchini keeps
them nice and moist and juicy so there's no reason to shy away from these
turkey burgers! The patties themselves are seasoned with green goddess style
herbs including basil, tarragon and chives along with some anchovies,
Worcestershire sauce and parmesan for tonnes of umami flavour! The rest of the
burgers consists of ripe green heirloom tomatoes, avocado, cucumber, pickled onions,
spinach sprouts, melted mozzarella and green goddess mayo! These green goddess
zucchini turkey burgers are a great way to celebrate and enjoy summers bounty
and they are the perfect burger for this long weekend!

Green Goddess Zucchini Turkey Burgers

Juicy zucchini turkey burgers with green goddess mayo,
avocados, melted mozzarella and ripe heirloom tomatoes that are just packed
with flavour and scream summer!
ingredients
FOR THE GREEN GODDESS MAYONNAISE:

1/2 cup mayonnaise
·
1/4 cup basil
·
1/4 cup tarragon
·
1/4 cup chives
·
2 cloves garlic
·
2 anchovy fillets
·
2 tablespoons lemon juice (~1/2 lemon)
·
1 teaspoon lemon zest
·
salt and pepper to taste
FOR THE PICKLED ONIONS:
·
1 spring onion, thinly sliced
·
1/2 cup white wine vinegar
·
2 teaspoons sugar
·
1 teaspoon salt
·
1/4 teaspoon black peppercorns, lightly crushed
FOR THE GREEN GODDESS ZUCCHINI TURKEY BURGER PATTIES:
·
1 pound ground turkey
·
1 cup
zucchini, grated and squeezed of excess liquid
·
2 tablespoons basil, chopped
·
2 tablespoons tarragon, chopped
·
2 tablespoons chives, chopped
·
2 cloves garlic, grated
·
2 anchovy fillets, chopped
·
1 teaspoon lemon zest
·
2 teaspoons Worcestershire sauce
·
1/4 cup parmigiano reggiano (parmesan), grated
·
1/4 cup
breadcrumbs (gluten-free for gluten-free)
·
salt and pepper to taste
·
8 ounces fresh mozzarella, sliced
FOR THE BURGERS:
·
4 buns
(gluten-free for gluten-free), optionally lightly toasted
·
1 cup baby
spinach (or lettuce)
·
1 large avocado, sliced
·
1 large
ripe green heirloom tomato, sliced
·
1 cucumber, sliced thinly
·
1 cup sprouts

FOR THE
GREEN GODDESS MAYONNAISE:

Puree
everything in a blender or a food processor.
FOR THE PICKLED ONIONS:

Mix
everything and let sit for 10 minutes.
FOR THE
GREEN GODDESS ZUCCHINI TURKEY BURGER PATTIES:

Mix
everything except the mozzarella, form 4 patties and grill until cooked, about
4-5 minutes per side before topping with the mozzarella and cooking until it
starts to melt, about 2-3 minutes.
FOR THE BURGERS:

Assemble
the burgers and enjoy!
